this one is simple and an amazing way to cook the days catch, walleye is easily the most popular fish in my neck of the woods but this recipe will work on anything from cod to catfish, i just use walleye because that's what i usually have in the freezer.
what you will need:
4- walleye fillets
vegetable oil (or your personal favorite frying oil, the type doesnt really matter)
3 or 4 eggs
1 cup all purpose flour
2 cups instant mashed potato flakes
1 tsp granulated garlic
1 tsp onion powder
1 tsp tarragon flakes
1 tsp dried lemon zest (fresh would probably work just fine i've always just used the dried stuff for convenience)
1/2 tsp fresh cracked pepper
kosher salt to taste
so what you want to do is get 3 bowls. in one mix the flour and a pinch of salt, in the second crack your eggs and mix well with a fork or whisk, and in the third mix the potato flakes and all the seasonings, adding salt to taste. then take your walleye fillets and pat them dry with a paper towel. dredge them first in flour then in the egg and then in the potato flakes using one hand for the wet side and the other for the dry side so you dont get horribly messy lol. after this is done set them on a plate for a couple minutes while you preheat your pan.
to cook place about half an inch of cooking oil in the bottom of a big heavy duty cast iron skillet (or the best fairly deep frying pan you have if you dont have cast iron) turn the heat to medium high and watch closely for it to just begin to smoke. the oil is now ready for the fish. VERY carefully put the four fish fillets into the skillet and then dont touch them, dont move them, dont do anything to them for about 3-4 minutes then very carefully flip each one and again leave it alone and let it fry for another 3-5 minutes depending on the thickness of the fish fillets. when breading is nice and crispy brown remove fish to a wire rack to drain for a minute or so (do not use a paper towel to set fried foods on to drain, all it does is make your food soggy) then just plate and serve.
goes great with fresh home made coleslaw and a bloody ceaser or mary.
